Avocado Toast with Egg

Avocado Toast with Egg

How to make

  • In a small bowl, mash avocado with a fork 

  • Stir in black pepper and salt. 

  • Set aside briefly while you toast the bread and make the scrambled eggs. 

  • In a small bowl, whisk egg, cheese, milk. 

  • Preheat a small, nonstick skillet over medium heat, spray with cooking spray. 

  • Add egg mixture and cook until the egg is just set but not over-cooked so the egg mixture becomes scrambled and fluffy as it cooks.

  • Spoon warm scrambled egg mixture on top of the avocado that you spread on the toast. 

  • Enjoy!


  • 1 large slice whole grain bread

lightly toasted


  • 1/2 avocado

  • 1/16 teaspoon black pepper

  • 1/16 teaspoon

  • kosher salt


  • 1 egg

  • 2 tablespoons shredded, reduced-fat cheddar cheese

  • 1 1/2 tablespoons nonfat milk

  • for garnish: additional, thinly sliced chives, herbs etc.
